Caribbean Grilled Chicken

Whenever I make grilled chicken, I like to marinate it in advance so it can soak up the flavor.  This chicken was tender, moist, and bursting with flavor.  I served this chicken with mango coleslaw and roasted sweet potato.

Ingredients:

2 chicken breasts cut into thirds/fourths

½ cup orange juice

2 tablespoons lime juice

1 tablespoon brown sugar

1 tablespoon honey

1 tablespoon Caribbean Jerk seasoning

1 teaspoon allspice

Directions:

  1. Mix orange juice, lime juice, brown sugar, honey, jerk seasoning, and all spice in a medium bowl.
  2. Add chicken to a container/bag and soak with the marinade at least 30 minutes prior to grilling; ideally a few hours or overnight in the refrigerator.
  3. Preheat grill to medium heat.
  4. Grill the chicken for at least 5 minutes per side until chicken reaches an internal temperature of 160 degrees.
  5. Let the chicken rest for a few minutes before serving.
  6. Enjoy!
