Cheddar Broccoli Melts
If you are looking for a quick and simple dinner recipe that will add vegetables to your diet then this is a recipe to try. Simply roast broccoli or a vegetable of your choice. Then add the roasted vegetables with shredded cheese over French bread, pizza crust, or tortillas. You can eat these open faced or close them in to make them more like calzones.
Ingredients:
1 ½ cups chopped broccoli florets
2 cups grated sharp cheddar cheese
3 tablespoons plain nonfat Greek yogurt
2 tablespoons fresh chives
1 11 ounce tube refrigerated French bread dough
1 egg lightly beaten
Ranch seasoning powder to taste
Directions:
- Preheat oven to 425 degrees and line a baking sheet with aluminum foil.
- Spread broccoli florets on the baking sheet. Spray with olive oil spray and sprinkle with Ranch seasoning.
- Roast 20 minutes.
- Meanwhile roll out the dough on a floured surface and cut the dough into rectangles.
- Transfer the rectangles to a baking sheet lined with aluminum foil and sprayed with nonstick spray.
- Mix the beaten egg with 1 tablespoon of water. Brush the dough with the egg mixture. Bake 5 minutes.
- After broccoli melts mix the broccoli, chives, 1 cup cheddar cheese, and Greek yogurt.
- Spread the broccoli mixture on the partially baked bread. Top with extra cheddar cheese.
- Bake 10-15 minutes until the cheese is melted.
