<strong>Key Lime Cheesecake Bars</strong>

I love key lime pie and since we weren’t able to travel this spring break I decided to bring the tropical flavors to us. 

Ingredients:

Crust-

18 cinnamon sugar graham crackers

6 tablespoons unsalted butter melted

Filling-

3 eight ounce reduced fat cream cheese at room temperature

¾ cup truvia or 1 ½ cup granulated sugar

½ cup reduced fat sour cream

½ cup key lime juice

2 teaspoons vanilla extract

4 large eggs

Topping-

Powdered sugar

Lime zest

Directions:

Crust-

  1. Preheat oven to 350 degrees.  Fill a 9×13 dish with water and place on lower rack. Spray a second 9×13 dish with nonstick spray.
  2. Add the graham crackers to a food processor and pulse to mix.
  3. Then add melted butter and mix in.
  4. Press the crust into the prepared 9×13 pan.

Filling-

  1. Add the cream cheese, sugar, sour cream, lime juice, eggs, and vanilla extract to the food processor.  Pulse to mix.
  2. Spread the filling out on top of crust.
  3. Bake for 45 minutes.
  4. Let cool then transfer to the refrigerator.
  5. Top with powdered sugar and lime zest.
  6. Slice into squares and enjoy!
