Key Lime Cheesecake Bars
I love key lime pie and since we weren’t able to travel this spring break I decided to bring the tropical flavors to us.
Ingredients:
Crust-
18 cinnamon sugar graham crackers
6 tablespoons unsalted butter melted
Filling-
3 eight ounce reduced fat cream cheese at room temperature
¾ cup truvia or 1 ½ cup granulated sugar
½ cup reduced fat sour cream
½ cup key lime juice
2 teaspoons vanilla extract
4 large eggs
Topping-
Powdered sugar
Lime zest
Directions:
Crust-
- Preheat oven to 350 degrees. Fill a 9×13 dish with water and place on lower rack. Spray a second 9×13 dish with nonstick spray.
- Add the graham crackers to a food processor and pulse to mix.
- Then add melted butter and mix in.
- Press the crust into the prepared 9×13 pan.
Filling-
- Add the cream cheese, sugar, sour cream, lime juice, eggs, and vanilla extract to the food processor. Pulse to mix.
- Spread the filling out on top of crust.
- Bake for 45 minutes.
- Let cool then transfer to the refrigerator.
- Top with powdered sugar and lime zest.
- Slice into squares and enjoy!
