Zucchini Enchilada Boats

These are easy to prepare with your favorite taco style meat. I was making tacos with ground beef for my children and wanted a lower carb meal. Feel free to customize the meat, level of spice, and toppings. I enjoyed these zucchini boats over a bed of shredded romaine lettuce with cherry tomatoes fresh from the garden.

Ingredients:

1-2 zucchini

1/2 onion diced

1 jalapeno diced

1 tablespoon spicy ranch or taco seasoning

shredded pepper jack or Mexican blend cheese

Toppings: salsa, guacamole, etc…

Directions:

  1. Slice zucchinis in half lengthwise. Use a spoon to remove the inside flesh. I added this to another dish.
  2. Preheat air fryer to 400 degrees.
  3. Spray zucchini with olive oil spray.
  4. Sprinkle seasoning over the zucchini.
  5. Sprinkle shredded cheese over the zucchini.
  6. Air fry for 10 minutes to soften.
  7. Meanwhile sauté peppers and onions on medium heat to soften.
  8. Add taco meat (or stick with onions and peppers).
  9. Add more shredded cheese. (I love cheese!)
  10. Air fry for an additional 5 minutes to melt the cheese.
  11. Add any desired toppings and enjoy.
