Zucchini Enchilada Boats
These are easy to prepare with your favorite taco style meat. I was making tacos with ground beef for my children and wanted a lower carb meal. Feel free to customize the meat, level of spice, and toppings. I enjoyed these zucchini boats over a bed of shredded romaine lettuce with cherry tomatoes fresh from the garden.
Ingredients:
1-2 zucchini
1/2 onion diced
1 jalapeno diced
1 tablespoon spicy ranch or taco seasoning
shredded pepper jack or Mexican blend cheese
Toppings: salsa, guacamole, etc…
Directions:
- Slice zucchinis in half lengthwise. Use a spoon to remove the inside flesh. I added this to another dish.
- Preheat air fryer to 400 degrees.
- Spray zucchini with olive oil spray.
- Sprinkle seasoning over the zucchini.
- Sprinkle shredded cheese over the zucchini.
- Air fry for 10 minutes to soften.
- Meanwhile sauté peppers and onions on medium heat to soften.
- Add taco meat (or stick with onions and peppers).
- Add more shredded cheese. (I love cheese!)
- Air fry for an additional 5 minutes to melt the cheese.
- Add any desired toppings and enjoy.
