Cajun Cheesy Sloppy Joes
These sloppy joes certainly are sloppy! They are delicious though and a different twist on traditional sloppy joes. I used ground turkey, but you could use ground chicken too.
Ingredients:
1-2 pounds ground turkey (I used 1 pound, but next time I will use two pounds to make the mixture a little thicker)
1-2 tablespoons Cajun seasoning
1 tablespoon onion powder
1 bell pepper diced
1 can Mexican corn drained
1 can fat free condensed chicken soup
4 ounces fat free plain Greek yogurt
2 cups shredded cheddar cheese
Directions:
- Spray a nonstick pan with olive oil spray.
- Cook the ground turkey on medium breaking up while it cooks.
- Sprinkle the Cajun seasoning and onion powder over the ground turkey.
- Cook for 5 minutes.
- Add the diced peppers and corn and mix in continuing to cook on medium for 3-5 minutes.
- Reduce heat to low and add the yogurt, condensed chicken soup, and 1/2 of the shredded cheese.
- Sprinkle remaining shredded cheese on top and remove from heat.
- Allow the cheese to melt.
- Serve on hamburger buns, bread, tortillas, etc…
- Enjoy!
