Cajun Cheesy Sloppy Joes

These sloppy joes certainly are sloppy! They are delicious though and a different twist on traditional sloppy joes. I used ground turkey, but you could use ground chicken too.

Ingredients:

1-2 pounds ground turkey (I used 1 pound, but next time I will use two pounds to make the mixture a little thicker)

1-2 tablespoons Cajun seasoning

1 tablespoon onion powder

1 bell pepper diced

1 can Mexican corn drained

1 can fat free condensed chicken soup

4 ounces fat free plain Greek yogurt

2 cups shredded cheddar cheese

Directions:

  1. Spray a nonstick pan with olive oil spray.
  2. Cook the ground turkey on medium breaking up while it cooks.
  3. Sprinkle the Cajun seasoning and onion powder over the ground turkey.
  4. Cook for 5 minutes.
  5. Add the diced peppers and corn and mix in continuing to cook on medium for 3-5 minutes.
  6. Reduce heat to low and add the yogurt, condensed chicken soup, and 1/2 of the shredded cheese.
  7. Sprinkle remaining shredded cheese on top and remove from heat.
  8. Allow the cheese to melt.
  9. Serve on hamburger buns, bread, tortillas, etc…
  10. Enjoy!
