Grilled Squash

<strong>Grilled Squash</strong>

This is a quick and easy recipe for a tasty vegetarian side dish that tastes great.

Ingredients:

1-2 yellow squash sliced ¼- ½ inch thick slices

1 sweet onion sliced ¼ inch thick slices

Olive oil spray

Salt and pepper

Sprinkle of lemon zest

Dash of fresh parsley and mint

Shredded fresh parmesan to taste

Directions:

  1. Arrange squash and onions in an even layer and spray with olive oil spray.  Then sprinkle with salt and pepper on both sides.
  2. Grill for 3 minutes per side.
  3. Top with parsley, mint, lemon zest, and parmesan.
  4. Enjoy!
