Italian Sausage and Veggies Sheet Pan
Some nights you need a dish you can throw in the oven and ignore until it is ready to serve. This simple sheet pan dinner is one of those meals.
Ingredients:
1 pound trimmed Brussels sprouts
1-2 parsnips cut into ¼ inch slices
1-2 sweet potatoes cut into wedges
1 red onion cut into quarters
2 tablespoons extra virgin olive oil
1 teaspoon Italian seasoning
6 Italian sausages
Salt and pepper to taste
Directions:
- Preheat the oven to 375 degrees and line a large rimmed baking sheet with aluminum foil. Spray with olive oil spray.
- Spread out Brussels sprouts, parsnips, sweet potato, and onion in an even layer. Drizzle with olive oil. Sprinkle with Italian seasoning and salt and pepper.
- Place sausages around the vegetables.
- Bake for 45 minutes until sausages are cooked through and vegetables are tender.
