Tuscan Chicken Pasta

Are you looking for a new pasta dish? This combination is one I had never tried, but it is one I will make again. The kids ate so much that there were no leftovers after this dinner.

Recipe adapted from Tuscan Chicken Skillet on Food Network

Total Time: 40 minutes

Ingredients:

1 box whole wheat spaghetti

4-8 slices turkey bacon

1 pound chicken breast/tenders cut into cubes

2 garlic cloves

4 plum tomatoes diced

4 cups spinach diced

2 cups nonfat cottage cheese

3/4 cup grated Parmesan

3 tablespoons fresh basil

1 teaspoon Italian seasoning

Directions:

  1. Bring a large pot of salted water to boil. Cook pasta according to box directions.
  2. In a large nonstick pan cook the chicken over medium heat until no longer pink. Sprinkle Italian seasoning over the chicken pieces. Transfer to a plate.
  3. Cook the bacon in a single layer until crispy on both sides. Place on paper towels to cool. Dice into bite size pieces.
  4. Spray a pan with olive oil. Sautee the tomatoes, garlic, and spinach. Add the cottage cheese and Parmesan cheese. Once the cheese has melted add in the chicken, bacon, and pasta. Stir gently to combine. Sprinkle with chopped basil and serve.
