Do you want your kids to eat their vegetables? Try wrapping them in bacon or fancy bacon as I call prosciutto.  My kids devour these green beans every time I make them.

Ingredients:

2 cups green beans ends trimmed

½ pound sliced prosciutto

1 garlic clove

Lemon zest

Lemon juice

Salt

Directions:

  1. Preheat the oven to 425 degrees and line a baking sheet with aluminum foil.  Spray with olive oil spray.
  2. Fill a large pot with salted water and 1 minced garlic clove.  Bring to a boil.
  3. Blanch green beans by boiling for 3-4 minutes.  Drain and set aside to cool.
  4. Wrap 4 green beans at a time in a strip of prosciutto.  Place on the baking sheet.
  5. Bake 15-20 minutes until prosciutto is crisp.
  6. Sprinkle lemon zest and juice over the green beans.
  7. Enjoy!
