Balsamic and Mozzarella Brussels Sprouts

Roasted Brussels sprouts are always delicious. These pair well with Italian themed meals with the sweetness and acidity from the balsamic vinegar and gooey melted mozzarella.
Ingredients:
2 cups Brussels sprouts stems removed and halved
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
¼ cup sliced buffalo mozzarella cheese
Directions:
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spray with olive oil spray.
- Add trimmed Brussels sprouts to a medium bowl. Drizzle with olive oil and balsamic vinegar. Shake to distribute the oil and vinegar.
- Spread the Brussels sprouts out in a single layer on a baking sheet with the flat side down.
- Sprinkle the chunks/slices of mozzarella cheese on and around the Brussels sprouts. (Hint: Try to keep the Brussels sprouts close together so the cheese melts on Brussels sprouts and not the foil.)
- Roast for 15-20 minutes.
