Lemon Ricotta Cookies with Lemon Glaze
Lemon is such a delightful flavor. These cookies have a fantastic texture and sweet and tart glaze.
Recipe adapted from Food Network
Ingredients-
Cookies–
2 cups flour
1 scoop vanilla protein powder
1 teaspoon baking powder
1 teaspoon salt
4 tablespoons extra virgin coconut oil slightly warm
2 cups sugar
2 eggs
1 15 ounce container part skim ricotta cheese
3 tablespoons lemon juice
Zest from 1 lemon
Glaze–
1 ½ cups powdered sugar
3 tablespoons lemon juice
Zest from 1 lemon
Directions:
- Preheat oven to 375 degrees. Line 2 large baking sheets with parchment paper.
- In a medium bowl combine the flour, protein powder, baking powder, and salt. Whisk to mix.
- Add sugar and warmed (10 seconds in the mircrowave) coconut oil to a large stand mixer. Mix on medium for 3 minutes until light and fluffy.
- Add 1 egg at a time while beating on medium.
- Add ricotta cheese, lemon juice, and lemon zest. Beat to combine.
- Add in dry mixture 1 cup at a time. The dough will be runny.
- Use a tablespoon size cookie scooper to add dollops to the parchment paper. Leave space between cookies as they will spread.
- Bake for 12-14 minutes.
- Let rest on baking sheet.
- Glaze- Add lemon juice, zest, and powdered sugar to a bowl. Whisk to combine.
- Use a spoon to drizzle glaze on the cookies. Spread the glaze with the back of a spoon. I added one dime size drop to each cookie and then after spreading that added an additional drop with the remaining glaze.
- Let glaze on cookies set for at least 2 hours before transferring to a container.
