Espresso Mousse
I love the flavor of espresso anytime of day. This is a simple light dessert that won’t make you feel guilty for enjoying it.
Ingredients:
1 package silken tofu drained
½ cup espresso chips
¼ cup unsweetened cocoa powder (preferably Dutch processed)
¼ cup water
¼ cup sugar or 3 packets monk fruit sweetener
Directions:
- Puree the tofu in a blender or food processor until it is smooth.
- Add the espresso chips, cocoa powder, and water in a saucepan over a pot containing an inch of simmering water. Stir frequently until smooth. Remove from heat. Mix in the sugar or monk fruit sweetener a little at a time until smooth.
- Add the chocolate mixture to the tofu and puree until smooth and well blended. Transfer to a covered dish and refrigerate until ready to serve.
- Optional: Top with whipped cream or shaved chocolate.
