Lightened up Dirt Cake

Warning: This dessert disappears in the blink of an eye around my children and family. When we make this for my dad’s potluck end of season track dinners we have to bring two and both are usually gone within minutes. Dirtcake is a popular dessert and with a few modifications I made it a little less indulgent while keeping it insanely rich and delicious!

I make this for celebrations all the time. You can place figurines, action figures, candles, and more on the top layer depending on the theme.

Total Time: 30 minutes

Ingredients:

30 Oreo’s (any variety I usually use a combination of double stuffed and chocolate)

2 tablespoons melted butter

1 container sugar free Cool Whip

1 8 ounce package reduced fat cream cheese

1 package sugar free vanilla or cheesecake instant pudding

1 package sugar free chocolate instant pudding

4 cups fat free milk

1 cup confectioners sugar (powdered sugar)

Directions:

  1. Crush 10 Oreo’s to crumbs using a food processor or in a bag. Mix in 2 tablespoons of melted butter.
  2. Spread Oreo mixture on the bottom of a 9×13 dish.
  3. Whisk one package of pudding with 2 cups of milk. Pour over Oreo mixture before it sets so it spreads easily.
  4. Crush 10 more Oreo’s leaving chunks. Sprinkle the cookie mixture over the pudding.
  5. Whisk one package of pudding with 2 cups of milk. Pour before it sets.
  6. In a large mixing bowl mix cream cheese and 1 cup of confectioners sugar. Gently fold in cool whip and mix. Spread cream cheese mixture over the pudding.
  7. Crush 5-10 more Oreo’s leaving chunks. Sprinkle crushed cookies evenly over the dish. Cover and store in the refrigerator until ready to serve.
