Maple Glazed Chicken and Apples
Even I was a little unsure of how this was taste; however, thankfully this was a simple and tasty meal. My kids raved over how well the apples paired with the chicken. I served this with baked potatoes topped with shredded cheese, plain nonfat Greek yogurt, and fresh chives.
Ingredients:
2 boneless skinless chicken breasts cut into bite size pieces
2 Granny Smith apples peeled and diced
2 shallots diced
2 tablespoons olive oil (I used a cranberry blood orange infused olive oil)
1/2 teaspoon ground thyme
1/2 cup unsalted chicken broth
1/4 cup pure maple syrup
1/4 cup apple cider vinegar (or white balsamic vinegar)
Directions:
- Heat a nonstick pan to medium heat with the olive oil.
- Add the chicken and cook stirring occassionally for 5 minutes.
- Add the apples and shallots and cook for 5 more minutes. Stir to mix
- Mix the broth, syrup, and vinegar in a bowl.
- Increase the heat to high and add the maple mixture.
- Cook on high 3 minutes to allow the glaze to thicken. Stir often.
- Remove from heat and serve.
