Tater Tot Breakfast Casserole
Anytime I make a baked ham I always have a lot of leftovers. This casserole could be served for breakfast or dinner and works well with ham. You could also brown and break up breakfast sausage to use if you want to add a little more kick to this meal.
Ingredients:
16 ounces Frozen Tater Tots
2 bell peppers diced
1/2 onion diced
2 cups cooked ham cubed
4 eggs
1/2 cup half and half
1 cup milk
3 cups shredded cheese
Directions:
- Arrange tater tots in the base of the 9×13 dish.
- Spread out diced peppers and onion over the tater tots.
- Spread out ham over the peppers and onions.
- Whisk together eggs, half and half, and milk. Pour over the ham.
- Top with shredded cheese.
- Allow dish to “soak” in the refrigerator for a few hours or over night.
- Cover with aluminum foil. Bake at 350 covered for 30 minutes.
- Uncover and bake for 20-30 minutes more until cheese is melted.
- Allow to rest for 5 minutes before serving.
