Dorito Casserole
This is an easy to prep casserole similar to some other taco casseroles I have made in the past. The nacho Doritos add crunch and flavor.
Ingredients:
1/2 large bag of Nacho Doritos
1 pound lean ground beef
2 tablespoons tomato paste
3-4 bell peppers diced
1 sweet onion diced
24 ounces mild enchilada sauce
1/2 cup plain nonfat Greek yogurt
2 tablespoons chili lime seasoning
2 cups shredded cheese (Taco blend, Mexican, Cheddar, etc…)
Toppings: shredded lettuce, salsa, guacamole, tomatoes, etc…
Directions:
- Preheat oven to 375 if baking now.
- Line the base of a 9×13 dish with Nacho Doritos.
- Brown the beef and drain fat. Mix the tomato paste and 1 tablespoon Chili Lime seasoning into the beef.
- Meanwhile sauté the peppers and onion over medium heat with the remaining tablespoon of Chili Lime seasoning.
- Spread the pepper mixture over the Doritos.
- Spread the beef over the vegetable mixture.
- Mix together the enchilada sauce and yogurt. Pour over the beef and vegetable mixture.
- Top with a layer of Doritos.
- Spread cheese over the Doritos.
- Cover with aluminum foil.
- Bake for 20-25 minutes if baking now. Bake for 45-50 minutes if baking after refrigerating.
- Let sit for a few minutes before serving.
- Add desired toppings and enjoy!
