Beef and Cheddar Noodle Bake
This is another quick and simple dinner casserole that my family enjoys!
Ingredients:
1 pound lean ground beef
15 ounces tomato sauce
1 tablespoon Italian seasoning
8 ounces egg noodles
2 bell peppers diced
1/2 cup sliced green onions
1/2 cup plain nonfat Greek yogurt
1 1/2 cups low fat cottage cheese
2 cups shredded sharp cheddar
Directions:
- Pre-heat oven to 350 degrees if cooking immediately after prepping.
- Brown ground beef and drain fat.
- Add peppers and tomato sauce to beef and simmer for 10 minutes stirring often.
- Cook noodles according to package directions.
- Mix yogurt, cottage cheese, green onions, and noodles in a medium bowl.
- Spread a layer of beef mixture in a 9×13 pan. Top with noodle mixture. Repeat.
- Spread shredded cheese on top.
- Bake for 20 minutes.
- If prepping and refrigerating bake for 40-50 minutes to allow dish to heat through and melt the cheese.
