Brown Sugar Pork Loin

This pork loin only takes minutes to prep and then it cooks all day in a crock pot. I often serve this with baked apples and mashed or baked potatoes.
Ingredients:
4 pound boneless pork loin
1 clove garlic
1/2 teaspoon salt
1 cup brown sugar
1 tablespoon honey mustard
1 tablespoon balsamic vinegar
1/2 teaspoon cinnamon
Directions:
- Rub the pork loin with garlic and sprinkle with salt.
- Prick the pork all over with a fork.
- Combine the brown sugar, mustard, and vinegar. Rub all over the pork.
- Cook on low 7-9 hours.
- Remove from heat and allow to rest for 5 minutes.
- Slice and enjoy!
