Strawberry Shortbread Pie

This pie is simple to make, yet it tastes delicious.  If you are looking for a light, chilled, refreshing dessert you can whip up in a few minutes then this is the dish for you.

Ingredients:

1 shortbread pie crust

1 can strawberry pie filling

1 cup heavy cream

1 cup powdered sugar

2 tablespoons freeze dried strawberry powder

Optional: sliced strawberries to garnish the pie

Directions:

1. Pour pie filling in the pie shell and spread it out.
2. Add whipping cream,  powdered sugar, and freeze dried strawberry powder to a stand mixer and whip gradually increasing the speed until it starts to thicken.
3. Spread the strawberry whip cream over the pie filling.
4. Optional: Top with sliced fresh strawberries.
5. Chill until ready to serve.
6. Enjoy!
