Sweet Potato Waffles
I have made sweet potato waffles a few time and this version did not disappoint. These waffles were filled with sweet potato and egg whites to make them light and fluffy.
Ingredients:
1 ½ cups mashed sweet potatoes
2 cups all purpose flour
1 tablespoon baking powder
½ teaspoon salt
6 egg whites at room temperature
1 cup milk
1 scoop vanilla protein powder
¼ cup light brown sugar
1/3 cup unsweetened applesauce
½ teaspoon allspice
Directions:
- Preheat waffle maker.
- In a large bowl whisk together the flour, baking powder, salt, and protein powder.
- In another bowl mix the sweet potato, milk, brown sugar, and applesauce.
- Beat the egg whites until stiff peaks form.
- Mix the sweet potato and flour mixtures together scraping down the edges of the bowl.
- Fold in the egg whites in thirds.
- Spray waffle maker with nonstick spray.
- Add 1 cup of batter to waffle maker. Cook until done. (I let it cook an extra minute or two to firm up the waffles).
- Transfer to a covered container.
- I love my sweet potato waffles with peanut butter, Nutella, nonfat vanilla Greek yogurt, and lite maple syrup.
