<strong>Lemon Blueberry Protein Muffins</strong>

A good dose of protein in the morning powers me through my workouts.  These lemon blueberry muffins are tasty and loaded with nutrients.

Ingredients:

2 large eggs

1/3 cup crunchy natural peanut butter

¾ cup nonfat vanilla Greek yogurt

¼ cup truvia or granulated sugar

Zest and juice from ½ lemon

¾ cup whole wheat flour

¾ cup almond flour

1 scoop vanilla protein powder

½ tablespoon baking powder

½ teaspoon baking soda

1 tablespoon flax seeds

1 cup blueberries (plus a few for topping)

1 tablespoon sugar in the raw

Directions:

  1. Preheat oven to 350 degrees and spray muffin tins with nonstick spray.
  2. Beat eggs, peanut butter, yogurt, sugar, lemon zest, and lemon juice in a large bowl. 
  3. Whisk flour, protein powder, baking soda, baking powder, and flax seeds in a medium bowl. 
  4. Mix in the dry ingredients scraping down the sides of the bowl.
  5. Use a large cookie scooper to fill muffin tins.
  6. Top each muffin with 2-3 blueberries and a dash of sugar in the raw.
  7. Bake 20-25 minutes until set.
  8. Allow to cool for at least 10 minutes before removing from muffin tins.
  9. Store in an air-tight container and refrigerate leftovers after 48 hours.
