Sweet Potato Hash with Sunny Side Up Eggs
Sweet potatoes are one of my favorite carbs. This hash is flavorful and when topped with a sunny side up egg tastes rich and delicious.
Ingredients:
2-3 sweet potatoes peeled and cubed
1 bell pepper diced
½ sweet onion chopped
1-2 tablespoons extra virgin olive oil
1 teaspoon smoked paprika divided
2-4 large eggs
2 scallions chopped
Directions:
- Preheat oven to 425 degrees. Line a baking sheet with aluminum foil.
- Add sweet potato to a medium bowl. Drizzle with 1-2 tablespoons olive oil and sprinkle with ½ teaspoon paprika. Shake to coat evenly. Spread out in a single layer on the baking sheet.
- Bake for 20 minutes until tender.
- Spray a nonstick pan with olive oil spray. Add the pepper and onion. Sprinkle with ½ teaspoon smoked paprika. Cook on medium heat for 10 minutes stirring often.
- Add sweet potatoes to the pan with the onions and peppers and cook on low heat while you cook the eggs.
- Spray a nonstick pan with olive oil spray. Heat pan to medium heat before adding the eggs. Cook eggs to your desired level of doneness.
- To serve add sweet potato hash to a bowl or plate and top with eggs and scallions.
