Cookie Dough Hummus

Somedays you really just want a chocolate chip cookie in life, but you don’t want the sugar, fat, and calories.  This simple to make hummus tastes like chocolate chip cookie dough.  You can use the dip with apple slices, carrots, or even heated up so the chips melt.

Ingredients:

1 ½ cups cannellini beans or chickpeas

¼ cup old fashioned oats

1 tablespoon vanilla protein powder

½ cup roasted cashews

3 tablespoons pure maple syrup

1 teaspoon pure vanilla syrup

2 tablespoons unsweetened vanilla almond milk or coconut milk

2 tablespoons chips (I used 1 tablespoon peanut butter and 1 tablespoon semi sweet chips)

Directions:

  1. Add beans, oats, cashews, protein powder, maple syrup, vanilla extract, and milk to food processor. 
  2. Pulse to mix.  Scrape down the sides at least 2 times.
  3. Transfer to small bowl. 
  4. Fold in chocolate chips.
  5. Serve with apple slices or carrot sticks or microwave for 30 seconds and enjoy as a dessert.
