Pinto Bean Salsa Salad

Ingredients:
Dressing-
1 garlic clove
1 ½ limes juiced
1 teaspoon salt
¼ teaspoon chili powder
¼ cup extra virgin olive oil
1 tablespoon honey
Salad-
1 15 ounce can pinto beans drained and rinsed
1 cup fresh corn
1 orange bell pepper diced
½ red onion diced
Salt and pepper
1 cup cherry tomatoes halved
¼ cup fresh cilantro
1 zucchini cut into ¼ inch slices and then quartered
Directions:
Dressing-
- Smash the garlic clove and sprinkle with salt. Smush to make a paste.
- Whisk the garlic paste, lime juice, honey, and chili powder in a bowl.
- Gradually whisk in the olive oil.
Salad-
- Toss the beans, corn, pepper, zucchini, onions in a medium bowl and mix.
- Add the dressing and toss to coat evenly.
- Fold in the tomatoes and cilantro.
- Enjoy!
