Stuffed Turkey Burgers
What could be better than a fresh, juicy burger stuffed with sundried tomatoes and cheese?

Ingredients-
1 pound lean ground turkey breast
½ cup diced carrots
¼ cup diced onion
1 cup diced spinach
½ cup chopped sundried tomatoes divided
4 slices fresh mozzarella
¼ teaspoon salt
Serve on a bun or over a salad
Directions:
- Chop carrot, spinach, and onion in a food processor. Spray a nonstick pan with olive oil. Cook on medium heat for 5 minutes to soften. Let cool.
- Stir cooked vegetables into the ground turkey.
- Divide turkey into 4 rounds.
- Divide each round into 2 patties.
- Sprinkle 4 patties with 2 tablespoons each sundried tomatoes and cheese.
- Top with remaining patty. Gently seal the edges.
- Season with salt and pepper.
- Grill 5 minutes on each side.
- Serve on a bun or over a salad.
- Tip: Drizzle oil from the sundried tomatoes on the hamburger before eating and enjoy with some more sundried tomatoes.
