Lemon Poppy Seed Energy Balls
These taste just like lemon poppy muffins, but they are much healthier and packed with protein too.
Ingredients:
2 scoops vanilla protein powder
½ cup old fashioned oats
1 tablespoon flax seeds
½ cup chopped almonds or cashews
1 tablespoon poppy seeds
2 tablespoons honey
Zest from one lemon
6 tablespoons lemon juice (about 2 lemons)
Water if needed
Directions:
- Add oats and nuts to food processor. Pulse to mix.
- Add protein powder, poppy seeds, flaxseeds, honey, lemon juice, and lemon zest. Pulse to mix.
- Add water if needed or refrigerate for 15 minutes.
- Use a cookie scooper to form balls.
- Store in an air-tight container.
