Orange Glazed Chicken and Asparagus
Roasted chicken with an orange glaze is a sure fire way to make your family smile. This chicken and asparagus is absolutely delicious. My kids don’t normally like asparagus, but with the orange glaze they devoured it.
Recipe adapted from Food Network
Ingredients:
2 split chicken breasts
1 pound asparagus
Salt and pepper to taste
Orange Citrus Glaze–
2 tablespoons frozen orange juice concentrate
1 naval orange zest and juice
2 tablespoons honey
1 teaspoon oregano
2 tablespoons sherry vinegar
½ cup vegetable oil
Directions:
- Orange Citrus Glaze– Add all ingredients to a medium bowl. Whisk to combine.
- Line a 9×13 dish with aluminum foil. Place the chicken in the dish. Spoon a few tablespoons of the orange citrus mixture over the chicken. Allow chicken to marinate for at least 30 minutes or overnight.
- Preheat the oven to 425 degrees. Spoon a little more of the orange sauce over the chicken before baking.
- Bake for 45 minutes. Remove chicken from the oven every 15 minutes to add a little more orange sauce.
- Broil on high for 3-5 minutes to crisp the skin.
- Meanwhile trim the ends off the asparagus.
- Bring a large pot of water to a boil.
- Boil the asparagus for 3 minutes to allow it to soften.
- Drain. Transfer the asparagus to a serving dish. Drizzle the orange sauce over the asparagus. Add some orange zest for an extra orange kick.
- Remove chicken from the oven once it reaches an internal temperature of 165 degrees. Let the chicken rest 5-10 minutes before serving.
- Drizzle extra sauce over the chicken before serving.
