If you love a touch of sweetness then these roasted pumpkin seeds are calling your name. These are my favorite pumpkin seeds and a treat I look forward to every fall after my children and I carve pumpkins.
Ingredients:
2 cups pumpkin seeds
¼ cup dark brown sugar
2 tablespoons butter melted
1 teaspoon pumpkin pie spice
Directions:
- Separate the pumpkin seeds from the pumpkin flesh and rinse well in a colander. Line a large baking sheet with paper towels and spread seeds out in an even layer to dry. Allow seeds to dry for several hours.
- Preheat oven to 300 degrees line a large baking sheet with parchment paper.
- Spread seeds out in an even layer. Roast for 25-30 minutes until seeds are beginning to dry out.
- Mix brown sugar, pumpkin spice, and melted butter in a medium bowl. Add the pumpkin seeds and mix well to coat.
- Spread the pumpkin seeds back out in an even layer. Use a spatula to scrape all of the butter and sugar mixture out with the seeds.
- Roast for 25-30 more minutes.
- Cool before serving. Then store in an air-tight container.
