Germs and winter are wearing my family down, so I thought a bright and light lemon thyme dessert would help perk us up. Ingredients: Bars- 1 cup coconut flour 1 stick unsalted butter (4 ounces) at room temperature 2 tablespoons fresh thyme leaves ½ teaspoon

Lemon Bars

Lemon bars are the perfect summer dessert.  These are light, tart, and a little sweet.

Ingredients:

Crust-

1 ½ cups all-purpose flour

4 tablespoons extra virgin coconut oil melted

1/3 cup powdered sugar

Filling-

4 eggs

1 ½ cups sugar

6 tablespoons lemon juice with zest from at least 1 lemon

4 tablespoons flour

1 teaspoon baking powder

Powdered sugar to sprinkle on top after baking

Directions:

  1. Preheat oven to 350 degrees.  Spray a 9×13 baking dish with baking spray.
  2. Add flour, coconut oil, and powdered sugar to food processor.  Pulse to mix.
  3. Transfer mixture to 9×13 dish and press down.
  4. Bake 20 minutes.
  5. Combine eggs, sugar, and lemon juice and whisk together by hand. 
  6. Add flour and baking powder right before baking.
  7. Gently pour filling over crust.  Bake 25 minutes. 
  8. Let cool on a wire rack.
  9. Sprinkle with powdered sugar before serving.
