Lemon Bars
Lemon bars are the perfect summer dessert. These are light, tart, and a little sweet.
Ingredients:
Crust-
1 ½ cups all-purpose flour
4 tablespoons extra virgin coconut oil melted
1/3 cup powdered sugar
Filling-
4 eggs
1 ½ cups sugar
6 tablespoons lemon juice with zest from at least 1 lemon
4 tablespoons flour
1 teaspoon baking powder
Powdered sugar to sprinkle on top after baking
Directions:
- Preheat oven to 350 degrees. Spray a 9×13 baking dish with baking spray.
- Add flour, coconut oil, and powdered sugar to food processor. Pulse to mix.
- Transfer mixture to 9×13 dish and press down.
- Bake 20 minutes.
- Combine eggs, sugar, and lemon juice and whisk together by hand.
- Add flour and baking powder right before baking.
- Gently pour filling over crust. Bake 25 minutes.
- Let cool on a wire rack.
- Sprinkle with powdered sugar before serving.
