I absolutely love German potato salad! Every time I take a bite I am flooded with memories of my grandfather. This is a lightened up recipe from the one in our family cookbook and makes a smaller amount which is perfect for satisfying a craving.

Ingredients:
2 cups chopped red potato
3 tablespoons olive oil
1 cup chopped onion
2 cloves garlic pressed
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 tablespoons maple syrup
3/4 sliced green onion
4 slices chopped cooked turkey bacon
1/4 cup fresh parsley
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
Directions:
- Place potatoes in a large pot, cover with cold water, bring to boil. Cook 15-18 minutes until potatoes are tender. Drain and slice potatoes. Set aside.
- Heat oil in a nonstick skillet over medium heat. Add onion and garlic. Cook for 3 minutes.
- Add potatoes and cook for 3-5 minutes until lightly browned.
- Add vinegar, mustard, maple syrup, and green onions and cook for 2 minutes so sauce can be absorbed.
- Transfer mixture to a bowl. Add bacon, parsley, salt, and pepper. Mix gently to combine.
- Serve warm or refrigerate and enjoy later.
