Potato Chip Crusted Chicken Strips

You can customize this recipe using your favorite potato chips for a crunchy and flavorful homemade chicken strip.

Ingredients:

3 snack size bags Lays Baked Cheddar and Sour Cream chips (or other chip variety)

½ cup all purpose flour

3 eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon ground mustard

Dash salt and pepper

1-2 pounds boneless chicken breasts cut into strips

Optional: Honey mustard for dipping

Directions:

  1. Preheat oven to 450 degrees.  Line a baking sheet with aluminum foil and spray with olive oil spray.
  2. In a shallow dish combine the flour, garlic powder, onion powder, paprika, and ground mustard.  Add salt and pepper to taste.
  3. Beat eggs in a separate dish.
  4. Use a food processor to crush chips or crush them to crumbs in the bags.  Add chips to a shallow dish.
  5. Set up a dredging station.  Dip chicken in flour and coat.  Dip chicken in egg to coat.  Dip chicken in chips and shake to coat completely.
  6. Set chicken strips in a dish until ready to cook or transfer to prepared baking sheet.
  7. Bake flipping chicken halfway through until chicken reaches an internal temperature of 165 degrees.  Baking time around 20 minutes.
  8. Serve chicken with honey mustard.
