Potato Chip Crusted Chicken Strips
You can customize this recipe using your favorite potato chips for a crunchy and flavorful homemade chicken strip.

Ingredients:
3 snack size bags Lays Baked Cheddar and Sour Cream chips (or other chip variety)
½ cup all purpose flour
3 eggs
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
½ teaspoon ground mustard
Dash salt and pepper
1-2 pounds boneless chicken breasts cut into strips
Optional: Honey mustard for dipping
Directions:
- Preheat oven to 450 degrees. Line a baking sheet with aluminum foil and spray with olive oil spray.
- In a shallow dish combine the flour, garlic powder, onion powder, paprika, and ground mustard. Add salt and pepper to taste.
- Beat eggs in a separate dish.
- Use a food processor to crush chips or crush them to crumbs in the bags. Add chips to a shallow dish.
- Set up a dredging station. Dip chicken in flour and coat. Dip chicken in egg to coat. Dip chicken in chips and shake to coat completely.
- Set chicken strips in a dish until ready to cook or transfer to prepared baking sheet.
- Bake flipping chicken halfway through until chicken reaches an internal temperature of 165 degrees. Baking time around 20 minutes.
- Serve chicken with honey mustard.
