Cheesy Roasted Brussels Spouts
I remember thinking Brussels sprouts were evil and disgusting as a child, but if I had eaten them prepared this way I think I would have changed my mind. Roasted Brussels sprouts are a favorite vegetable for my children. I have experimented with different seasonings, but this combo seems to appeal the most when we are craving cheesy and savory sprouts.
Ingredients:
2 cups Brussels sprouts stems removed and halved (save the leaves that fall off)
1-2 tablespoons extra virgin olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
¼ cup shredded cheese (I used Monterrey Jack)
Directions:
- Preheat oven to 425 degrees and line a baking sheet with aluminum foil. Spray with olive oil spray.
- Place Brussels sprout halves and leaves in a medium bowl. Drizzle olive oil, garlic powder, onion powder, and paprika. Shake/stir to mix and coat all of the sprouts.
- Spread Brussels out in a single layer flat side down on the baking sheet. Top with shredded cheese.
- Bake 20-25 minutes until Brussels sprouts are lightly browned and crispy.
