Blueberry Maple Roasted Brussels Sprouts

Brussels sprouts taste wonderfully when paired with the sweetness of maple syrup and a blueberry infused balsamic vinegar.  These are easy to prepare and pair well with many main dishes.

Ingredients:

12 ounces Brussels sprouts halved with stems removed

2 tablespoons extra virgin olive oil

2 tablespoons pure or light maple syrup

1 tablespoon blueberry balsamic vinegar

Directions:

  1. Preheat the oven to 350 degrees.  Line a baking sheet with aluminum foil and spray with nonstick spray.
  2. Add prepared Brussels sprouts, olive oil, maple syrup, and balsamic vinegar to a large bowl.  Cover and shake to ensure all Brussels sprouts get covered with the liquid.
  3. Arrange Brussels spouts cut side down in a single layer on a baking sheet.  Add any remaining leaves too. 
  4. Bake 25-30 minutes until Brussels spouts are lightly browned.
  5. Enjoy!
