Crock Pot Taco Stuffed Peppers
I normally bake stuffed peppers, but when I saw this recipe I decided to try it since you do not have to pre-cook the meat. I had intended to use ground beef; however, since I accidentally bought chicken breast instead I chopped up chicken breasts to use in this recipe. These peppers are very tender and only take a few minutes to prepare.
Ingredients:
6 large bell peppers
2 chicken breasts diced or 1 pound lean ground meat
1 can tomatoes with chilies
1/2 onion diced
1 tablespoon taco seasoning
6 slices Pepper jack cheese
Optional: salsa, queso, guacamole, scallions, plain nonfat Greek yogurt, etc…
Directions:
- Remove the tops and insides of 6 bell peppers.
- Chop up the top rings from the peppers to add to the filling.
- Arrange peppers standing in the crockpot.
- Mix meat, tomatoes, diced onion, diced pepper, and taco seasoning.
- Fill the peppers pushing the stuffing down to ensure peppers are fully stuffed.
- Cook on low 6-8 hours.
- Approximately 10-15 minutes prior to serving top each pepper with a slice of chees and tuck the edges into the pepper.
- To serve remove peppers from the crock pot and add desired toppings.
- Enjoy!
