Fiesta Avocado and Corn Salad
This salad tastes great on its or in a taco. You can mix and match ingredients depending on your preferences.

Ingredients-
1 cup sweet corn
1/4 cup matchstick carrots
1 bell pepper diced
2 medium tomatoes diced
1/4 cup red onion diced
1-2 avocados diced
juice and zest from 2 limes
1 tablespoon fresh cilantro diced
1 garlic clove minced
1/4 teaspoon chipotle chile powder
dash of freshly ground salt and pepper
Directions:
- Cook the corn (fresh corn off the cob is the best, but frozen corn works too)
- Dice the red onion. Then soak the red onion in cold water for 5 minutes. Drain. Then add to salad.
- Add diced vegetables, lime zest, lime juice, and chile powder to a bowl. Mix to combine.
- Add avocado when ready to serve.
- Store in the refrigerator.
- You can eat this from the bowl or use it to top a taco.
