Apple Spice Cake
I love baked apples anytime of year. Baked apples buried in a spice cake under an apple pie spiced cream cheese frosting makes this cake a perfect fall treat.
Ingredients:
Cake-
1 spice cake mix
3/4 cup water
3 large eggs
1/3 cup unsweetened applesauce
5 apples peeled and diced
1 teaspoon ground cinnamon
1 teaspoon sugar
Frosting-
8 ounces reduced fat cream cheese
8 ounces unsalted butter
1 tablespoon vanilla extract
3-4 cups powdered sugar
1 teaspoon apple pie spice
1 tablespoon milk
Directions:
Cake-
- Preheat oven to 350 degrees.
- Spray a 9×13 pan with baking spray.
- Add diced apples to a microwavable safe bowl. Sprinkle cinnamon and sugar over apples. Heat for 3 minutes to soften.
- Add cake mix, eggs, water, and applesauce to a mixer. Mix on medium to combine.
- Scrape the edges of the bowl and fold in 1/2 of the diced apples.
- Spread cake batter in the prepared pan.
- Sprinkle remaining apples on top of the cake batter.
- Bake 20-25 minutes until a toothpick inserted in the center comes out clean.
- Let cake cool on a cooling rack.
- Frosting–
- Beat the cream cheese and butter with the whisk attachment until light and fluffy.
- Add the vanilla extract and apple pie spice. Mix in.
- Add the powdered sugar 1 cup at a time mixing on medium low speed.
- Add milk as needed to get desired consistency.
- Whisk on medium/high to make sure frosting is light and fluffy.
- Spread the icing over the cake.
- Enjoy!
