Apple Spice Cake

I love baked apples anytime of year. Baked apples buried in a spice cake under an apple pie spiced cream cheese frosting makes this cake a perfect fall treat.

Ingredients:

Cake-

1 spice cake mix

3/4 cup water

3 large eggs

1/3 cup unsweetened applesauce

5 apples peeled and diced

1 teaspoon ground cinnamon

1 teaspoon sugar

Frosting-

8 ounces reduced fat cream cheese

8 ounces unsalted butter

1 tablespoon vanilla extract

3-4 cups powdered sugar

1 teaspoon apple pie spice

1 tablespoon milk

Directions:

Cake-

  1. Preheat oven to 350 degrees.
  2. Spray a 9×13 pan with baking spray.
  3. Add diced apples to a microwavable safe bowl. Sprinkle cinnamon and sugar over apples. Heat for 3 minutes to soften.
  4. Add cake mix, eggs, water, and applesauce to a mixer. Mix on medium to combine.
  5. Scrape the edges of the bowl and fold in 1/2 of the diced apples.
  6. Spread cake batter in the prepared pan.
  7. Sprinkle remaining apples on top of the cake batter.
  8. Bake 20-25 minutes until a toothpick inserted in the center comes out clean.
  9. Let cake cool on a cooling rack.
  10. Frosting
  11. Beat the cream cheese and butter with the whisk attachment until light and fluffy.
  12. Add the vanilla extract and apple pie spice. Mix in.
  13. Add the powdered sugar 1 cup at a time mixing on medium low speed.
  14. Add milk as needed to get desired consistency.
  15. Whisk on medium/high to make sure frosting is light and fluffy.
  16. Spread the icing over the cake.
  17. Enjoy!
