Corn Casserole

Corn Casserole

Corn pudding is a side dish I enjoy, but I don’t make often.  This is a healthy recipe from Beachbody that I really enjoyed. 

Ingredients:

1 can whole corn drained

1 can creamed corn

1 cup shredded cheddar cheese

1 cup cornmeal

1 cup plain nonfat Greek yogurt

1 large egg

3 tablespoons chopped fresh chives

2 teaspoons baking soda

½ teaspoon salt

½ teaspoon ground black pepper

Directions:

  1. Preheat oven to 350 degrees and spray an 8×8 dish with nonstick spray.
  2. Add corn, creamed corn, cheese, cornmeal, yogurt, egg, chives, salt, and pepper to a bowl and mix together.
  3. Pour into prepared dish.
  4. Bake for 45-55 minutes until golden and just set in the middle.
  5. Let rest for five minutes before serving.
  6. Enjoy!
