Healthy Peanut Butter Lover Muffins

If you know me, then you already know how much I adore peanut butter. These healthy muffins are packed with peanut butter flavor and do not disappoint.
Ingredients:
1 ½ cups unsweetened vanilla almond milk
½ cup natural creamy peanut butter
1 scoop powdered peanut butter (1/4 cup)
1 cup almond flour
1 cup whole wheat flour
1 scoop vanilla protein powder
4 teaspoons baking powder
1/8 cup truvia or ¼ cup granulated sugar
1 teaspoon salt
1 tablespoon vanilla extract
1 cup peanut butter chips (plus a few to top each muffin)
Optional dark chocolate chips
Directions:
- Preheat oven to 350 degrees and spray muffin tins with baking spray.
- In a large bowl whisk the milk and peanut butter until well blended. Mix in vanilla extract.
- Add the flours, sugar, powdered peanut butter, protein powder, baking powder, and salt.
- Mix gently to combine.
- Fold in the peanut butter chips.
- Use a large cookie scooper to fill muffin tins.
- Place 4-6 peanut butter or chocolate chips on each muffin.
- Bake 25-30 minutes until muffins are set.
- Let muffins cool for at least 10 minutes before removing from muffin tins.
- Store in an airtight container and refrigerate after 24 hours.
