Cheesy Ranch Pork Chops

These pork chops can be prepped in an instant and are a family hit.  I made mashed cauliflower for me and mashed potatoes for my family.  The cheesy sauce is an incredible gravy. 

Ingredients

6-9 boneless pork chops

1 can condensed chicken soup reduced fat

1 can cheddar soup

1 packet ranch seasoning

Directions:

  1. Spray a crock pot liner with nonstick spray.
  2. Place pork chops in a layer on the bottom of the crock pot.
  3. Pour soups over the pork chops.
  4. Sprinkle seasoning over the soup mixture.
  5. Cook on high for 4 hours or low for 6 hours.
  6. Mashed potatoes or cauliflower taste amazing with the extra “gravy”.

“Mashed Cauliflower”

  1. Preheat oven to 450 degrees. Line a baking sheet with aluminum foil. Spray with nonstick spray. 
  2. Spread cauliflower in an even layer and sprinkle with salt. Fold foil over the cauliflower.
  3. Roast for 20 minutes.
  4. Uncover cauliflower and roast for 15 more minutes.
  5. Transfer cauliflower to a food processor.
  6. Sprinkle 1 tablespoon ranch seasoning over the cauliflower and pulse to mix.
  7. Add 1-2 tablespoons Greek yogurt to make creamy if desired.
