Light Protein Packed Pumpkin French Toast

I can’t even remember the last time I had French toast, but I’m sure it has been years.  I tried to lighten up French toast some by using egg whites and nonfat milk.  I also added a scoop of vanilla protein powder to add some protein to the dish.  Then I topped my French toast with peanut butter and vanilla Greek yogurt. I used pumpkin bread, but any bread you like will work.

Ingredients:

1 loaf sliced bread (I used Pepperidge farm pumpkin spiced bread)

½ cup egg whites

½ cup nonfat milk

1 teaspoon pumpkin spice

1 scoop vanilla protein powder

Directions:

  1. Add egg whites, milk, pumpkin spice, and protein powder to a large bowl or dish with flat bottom.  Whisk to mix.
  2. Heat a skillet to medium heat.
  3. Dip each slice of bread in the egg mixture to coat both sides.  Then cook until done on both sides.
  4. Serve with peanut butter, Nutella, Greek yogurt, syrup, etc…
  5. Enjoy!
