Why didn’t I discover butternut squash years ago? This squash was so good I wish I made more. I will be revisiting this recipe again. I made this with Old Bay Grilled Shrimp. This is the perfect low carb veggies most side dish to pair with your favorite seafood.
Recipe adapted from Food Network
Ingredients:
1 butternut squash peeled and sliced into ½ inch rings with seeds removed
1 tablespoon Old Bay seasoning
Salt to taste
Olive oil spray
Directions:
- Peel and slice a butternut squash.
- Preheat oven to 425 degrees and line a baking sheet with aluminum foil.
- Place rings on the baking sheet. Spray squash with olive oil spray.
- Sprinkle each ring with a little Old Bay seasoning and salt.
- Roast 30 minutes.
- Enjoy!
