Spiced Apple Waffles

My mother in-law brought back a bushel of apples from the apple tree in her yard in North Carolina and I can’t stand to see fruit go to waste, so I decided to make spiced apple waffles with a warm cinnamon apple topping.  I also used some of my mother in-law’s famous apple butter too.

Ingredients:

1 cup whole wheat waffle mix

1 scoop vanilla protein powder

1 egg

¼ cup unsweetened apple sauce

2 cups peeled and diced apples

1 apple peeled and sliced

2 teaspoons cinnamon divided

1/8 teaspoon cardamom divided

1 cup milk (I used coconut milk)

Directions:

  1. Preheat waffle maker.
  2. Place diced apples in a microwavable safe bowl.  Sprinkle with 1 teaspoon cinnamon and 1/16 teaspoon cardamom.  Microwave for 3 minutes.  Set aside to cool.
  3. Mix waffle mix, protein powder, egg, applesauce, and milk in a large bowl. 
  4. Fold in the diced apples.
  5. Spray waffle maker with nonstick spray.  Add 1 cup mixture to waffle maker and flatten gently.  Cook until done.
  6. Place sliced apples in a microwavable safe bowl.  Sprinkle with 1 teaspoon cinnamon and 1/16 teaspoon cardamom.  Microwave 1 minute.
  7. Top waffles with apple butter and sliced apples.
