Pesto and Veggie Tortilla Pizza

I haven’t been in the mood for salads this week, but I wanted a lunch loaded with veggies.  This simple pizza is packed with veggies and is ready in just a few minutes. I have made different versions of this all week using eggplant hummus and other dips as the sauce.

Ingredients:

1 sundried tomato tortilla (or other if you prefer)

½ cup spinach

¼ cup fresh pesto

2 thick slices tomato or cherry tomatoes halved

¼ cup diced bell peppers

¼ cup sweet onion sliced

2 slices provolone cheese cut into strips

Directions:

  1. Preheat oven to 350 degrees. Line a small baking sheet with aluminum foil.
  2. Place tortilla on baking sheet.
  3. Spread a layer of pesto on the tortilla.
  4. Sprinkle spinach over the tortilla.
  5. Top with bell pepper, tomato, onion, etc…
  6. Spread out cheese strips over the tortilla.
  7. Bake 10 minutes.
  8. Enjoy!
