Cheesy Chili Lime Chicken Sheet Pan Fajitas
Sheet pan dinners are wonderful on nights when you don’t have a lot of time to prep and do not want to make lots of dishes. These cheesy chili lime chicken fajitas are simple to prep and cook and taste amazing.
Ingredients:
3 chicken breasts cut into bite size pieces
2 cups diced peppers (bell, banana, long, etc..)
1 cup sliced onion
2 limes juiced and zested (divided)
2 teaspoons chili lime seasoning
1 cup shredded cheese (Taco, pepper jack, Monterey jack. Etc..)
Tortillas or Bibb lettuce
Toppings: salsa, plain nonfat Greek yogurt, avocado
Directions:
- Zest and juice 1 lime. Sprinkle zest and juice over chicken. Sprinkle 1 teaspoon chili lime seasoning over chicken. Let chicken marinate for at least 15 minutes or longer if possible.
- Zest and juice 1 lime. Sprinkle zest and juice over peppers and onions. Sprinkle 1 teaspoon chili lime seasoning over chicken. Cover and let marinate until ready to cook.
- Preheat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil.
- Place chicken in a single layer on half the pan. Place vegetables in a single layer on the other half.
- Cook for 30 minutes.
- Sprinkle cheese over chicken. Bake 5 more minutes until cheese melts.
- Serve on tortillas or lettuce wraps. Add desired toppings.
