Italian Sausage Stuffed Long Peppers

My six-year-old said these were one of the best foods he has ever eaten.  These reminded us of a sausage and green pepper topped pizza. Leftover filling tastes amazing on lettuce wraps too.

Ingredients:

6-8 long peppers

1 pound Italian sausage casings removed

½ onion diced

½ cup pizza sauce

¼ cup shredded Italian cheese mixture

6-8 slices provolone cheese

Directions:

  1. Remove the tops from the peppers.  Carefully scoop out the insides and seeds. Reserve pepper tops.
  2. Spray peppers with olive oil spray and set in a glass baking dish.
  3. Bake peppers for 20 minutes.
  4. Dice remaining pepper tops and ½ an onion.  Sauté pepper and onion in a nonstick skillet for 5 minutes on medium heat.
  5. Spray a large nonstick skillet with olive oil spray.  Cook sausage until browned on medium heat breaking it up into small chunks. Reduce heat to low.
  6. Add peppers and onions to sausage and mix well.
  7. Add ½ cup pizza sauce to sausage mixture.  Stir to combine.
  8. Sprinkle shredded cheese over sausage mixture.
  9. Remove peppers from the oven.  Use a spoon to carefully stuff the sausage mixture into the peppers.
  10. Bake 10 minutes.
  11. Remove from the oven.  Add a slice of provolone cheese to each pepper.  Bake 5 minutes.
