Cinnamon Roll Muffins
If you are craving cinnamon buns, but don’t want the carbs, fat, and sugar then these muffins are for you.

Ingredients:
Muffins-
1 cup almond flour
1 cup whole wheat flour
¼ cup coconut sugar
¼ cup pure maple syrup
1 scoop vanilla protein powder
2 tablespoons powdered peanut butter
1 teaspoon vanilla extract
1 egg
1 ½ teaspoons baking powder
1 ½ teaspoons cinnamon
½ teaspoon salt
¼ cup unsweetened applesauce
¼ cup unsweetened vanilla almond milk
Icing-
3 tablespoons vanilla Greek nonfat yogurt
3 tablespoons powdered sugar
Directions:
- Preheat the oven to 350 degrees. Spray muffin tins with baking spray or line with liners.
- Add flours, sugar, protein powder, peanut butter powder, baking powder, salt, cinnamon, to a bowl. Mix to combine.
- Add beaten egg, applesauce, vanilla extract, maple syrup, and almond milk. Mix gently.
- Use a medium cookie scooper to fill muffin tins halfway.
- Gently press 2-3 banana slices on the top of each muffin.
- Bake 15 minutes.
- Let cool for at least 10 minutes on a wire rack before removing from the pan.
- Mix yogurt and powdered sugar in a bowl. Drizzle one teaspoon icing over each muffin.
- Store in an air-tight container in the refrigerator.
