Banana Papaya Muffins
I bought a papaya for the first time for another recipe, so I had fun finding other recipes to use the other half of the papaya. These muffins taste incredible without any added sugar. The spices and sweetness from the fruit mix for a muffin you won’t forget.
Recipe adapted from Food Network
Ingredients:
1 cup whole wheat flour
1 cup almond flour
1 scoop vanilla protein powder
¼ teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon ground ginger
2 mashed bananas
½ cup unsweetened applesauce
1 cup diced papaya
2 large eggs
Directions:
- Preheat the oven to 350 degrees. Spray muffin tins with baking spray or line with liners.
- Add flours, protein powder, baking soda, baking powder, salt, cinnamon, allspice, and ginger to a bowl. Mix to combine.
- Add beaten eggs and applesauce. Mix gently.
- Add diced bananas and papayas. Mix gently.
- Use a large cookie scooper to fill muffin tins.
- Bake 20 minutes.
- Let cool for at least 10 minutes on a wire rack before removing from the pan.
