Strawberry Waffles

Waffles are easily my favorite breakfast food because I can customize them by adding fruits, nuts, protein powder, and lots of other ingredients.  These strawberry waffles using fresh picked strawberries topped with strawberry jam had me smiling from ear to ear.

Ingredients:

2 cups whole wheat waffle mix

2 large eggs

½ cup unsweetened applesauce

1 scoop vanilla protein powder

1 cup diced strawberries

Optional: 1 cup fresh blueberries to really make these a fruity treat

Toppings: strawberry jam, nonfat vanilla Greek yogurt, syrup, etc..

Directions:

  1. Add waffle mix, eggs, applesauce, and protein powder to a medium bowl.  Mix to combine.
  2. Fold in diced strawberries.
  3. Pre-heat waffle maker (I make Belgium waffle sized waffles).
  4. Spray with nonstick butter spray.
  5. Add 1 cup waffle mix to the waffle maker at a time.  Cook until done.
  6. Top with strawberry jam, nonfat vanilla Greek yogurt, syrup
