Broccoli and Cheddar Stuffed Red Potatoes

Baked potatoes, broccoli, and cheese- What could be better? This is a simple side dish to accompany any meal.

Ingredients:

1 medium red potato for every 2 people (I cooked 3 potatoes for 6 people)

1 cup steamed broccoli

1/2 cup shredded cheddar

olive oil for “painting” on potatoes

salt/pepper

Directions:

  1. Preheat oven to 425 degrees.
  2. Paint potatoes with olive oil. Sprinkle salt and pepper over potatoes. Place on baking sheet with aluminum foil.
  3. Bake 15-20 minutes until potatoes are easily pierced.
  4. Steam broccoli in microwave or boil in water for 5 minutes until tender. Chop broccoli once it cools.
  5. Cut potatoes in half. Spray with olive oil spray. Place a spoonful of broccoli on the top of each potato half. Try to cover as much of the potato as possible. Sprinkle cheddar on each potato slice as much or as little as desired.
  6. Return to oven for 5 more minutes. Add more cheese if you really like cheese. Serve
  7. Optional: Top with nonfat plain Greek yogurt or sour cream.
